Ingredients
1.5kg fluffy potatoes, peeled and chopped
100ml milk
50g butter
¼ tsp ground nutmeg
Salt & pepper
Flat leaf parsley
40g cheddar cheese, grated
Instructions
Preheat oven to 180°C/160°C fan assisted/gas 4
Place the potatoes in a large saucepan and cover with cold water. Bring to the boil and simmer for 15 minutes or until cooked through.
Drain using a colander.
In the saucepan add butter, nutmeg and milk then gently warm. Turn off the heat. Return the potatoes to the saucepan and using a potato masher, mash the potatoes until smooth and creamy.
Season with salt and pepper and add flat leaf parsley.
Spoon the potato into a baking/oven dish. Top with cheddar cheese.
