Ingredients
1 large loaf of day-old bread such as Vienna or sourdough
100g butter
2 cloves of garlic, finely chopped or grated
Small bunch fresh flat leaf parsley, roughly chopped
250g Dubliner vintage cheese, grated
Instructions
Pre-heat oven to 180°C / 160°C fan assisted / gas 4.
Using a bread knife, cut the bread diagonally into diamond shaped pieces to about ¾ of the way down. Be careful not to cut the loaf all the way through to the bottom. Place loaf on a large piece of tinfoil (or two overlapping pieces) on a baking tray. Set aside.
Place butter and garlic in a heat proof bowl and microwave in short 10 second bursts until butter is melted. Alternatively, melt over medium heat in a small saucepan. Stir in chopped parsley.
Spoon melted garlic butter in between the sliced cracks, then stuff with grated cheese. Loosely wrap foil around the loaf. Seal closed and bake in pre-heated oven for 20-30 minutes, or until cheese has melted.
