Ingredients: 1Kg Maris Piper Potatoes; skin on finely sliced; 1/2 medium onion; peeled and finely sliced; 3-4 sprigs of thyme; leaves only; 400ml Carol’s Chicken Stock; 1 Tbsp Olive oil

1/2 medium onion, peeled and finely sliced
3-4 sprigs of thyme, leaves only
400ml Carol’s Chicken Stock
1 Tbsp Olive oil

Instructions

Preheat the oven to 180 degrees Celsius/Gas 4
Add your sliced potato to a bowl of water for 10 minutes and drain.
Arrange the slice potato and onion on their side, slightly slanted in a baking dish.
Add the thyme.
Pour over the stock. Drizzle on the olive oil.
Bake in the oven for 45-50 minutes or until crispy on top and cooked through.
